That’s the dirt on carrot that is mixed with the water. You could see it on the surface as well.

I’m picturing someone boiling a lone carrot in this tiny pot for dinner.

Your water is probably slightly basic (hard water usually is). The alkalinity of the water causes the pigments (carotenoids and chlorophyll) in the carrot to turn green.

Well … it is the holiday season … don’t be surprised if the next time this happens, the water turns a bit red.

I had this happen with sweet potatoes! Pretty sure I posted in this sub about it too!

Even the idea, of one carrot being boiled alone in a casserole, makes me feel lonely and depressed..

Cooking carrots actually increases the bioavailability of beta-carotene but steaming them leaves more nutrients in the carrots instead of water

Was it a peeled or unpeeled carrot? I’ve noticed unpeeled grated carrots in carrot cake batter can turn green after bakingÂ

Carrots just want to turn every other colour if you give them half a chance. Ever tried purple or yellow carrots? (They taste the same, but they’re pretty.)

There’s carotene the water

I’m mildly interested in why this happened
I’m guessing the beta carotene oxidized
Carrots weren’t originally orange!
Everything turns green if left long enough.
